Ingredients

Scale

Chicken

  • 2 large boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Flatbread Assembly

  • 4 pieces of flatbread (store-bought or homemade)
  • 1 cup fresh basil pesto (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese

Garnish

  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature to melt the cheese and crisp the flatbread effectively.
  2. Season Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper. Optionally, add garlic powder or Italian seasoning for extra flavor.
  3. Cook Chicken: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes on each side until browned and cooked through, with an internal temperature of 165°F (75°C).
  4. Rest and Slice Chicken: Remove chicken from the skillet and let it rest for 5 minutes to retain juices. Then slice into thin strips.
  5. Prepare Flatbreads: Lay the flatbreads out on a baking sheet. Spread about a quarter cup of basil pesto evenly over each flatbread.
  6. Add Chicken: Distribute the sliced chicken strips evenly over the pesto-covered flatbreads.
  7. Add Cheese and Tomatoes: Sprinkle shredded mozzarella cheese over the chicken, then scatter the halved cherry tomatoes evenly on top.
  8. Top with Parmesan: Sprinkle grated Parmesan cheese evenly across the flatbreads for a flavorful topping.
  9. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes until the mozzarella melts and becomes bubbly, and the edges of the flatbread are golden and crisp.
  10. Broil for Crispiness (Optional): For a crispier top, switch the oven to broil and broil the flatbreads for 1-2 minutes, watching closely to prevent burning.
  11. Cool Slightly: Remove the flatbreads from the oven carefully and let them cool for a minute to set the cheese slightly.
  12. Slice and Garnish: Slice each flatbread into quarters or halves. Garnish with fresh basil leaves if desired for a pop of color and fresh flavor.
  13. Serve: Serve the flatbreads warm alongside a fresh side salad or your favorite dipping sauce for a complete meal.

Notes

  • Use store-bought pesto for convenience or homemade pesto for fresher flavor.
  • Chicken can be grilled instead of pan-fried if preferred.
  • Flatbread can be replaced with naan or pita for variety.
  • For a vegetarian version, omit chicken and add grilled vegetables such as zucchini or eggplant.
  • Ensure chicken is cooked through by using a meat thermometer.
  • Leftovers can be refrigerated and reheated in the oven to maintain crispiness.
