Ingredients

Scale

Quesadilla Filling

  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 teaspoon black pepper

Other

  • 4 flour tortillas
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Stir until all ingredients are well mixed to create a flavorful filling.
  2. Assemble the quesadilla: Lay one flour tortilla flat on a clean surface. Spoon about one-fourth of the filling mixture onto half of the tortilla, spreading it evenly but keeping it from the edges.
  3. Fold the tortilla: Carefully fold the tortilla over the filling to form a half-moon shape, pressing gently to seal in the contents.
  4. Heat the skillet: Place a large skillet or griddle over medium heat. Add the olive oil and allow it to heat until shimmering, which helps to crisp the tortilla nicely during cooking.
  5. Cook the quesadilla: Place the filled and folded tortilla in the heated pan. Cook for 3 to 4 minutes on one side, pressing gently with a spatula to ensure even melting of the cheese and browning of the tortilla. Flip carefully and cook the other side for an additional 3 to 4 minutes until golden and crispy.
  6. Serve: Remove the cooked quesadilla from the pan and let it cool slightly for a minute or two. Then slice into wedges and serve warm for the best flavor and texture.

Notes

  • For a crispier quesadilla, consider using a non-stick pan and avoid overcrowding the pan with too much filling.
  • You can customize the filling by adding olives, sun-dried tomatoes, or fresh herbs like oregano or basil for extra Mediterranean flair.
  • If you prefer a spicier kick, add a pinch of crushed red pepper flakes to the filling mixture.
  • Use whole wheat or gluten-free tortillas to make this recipe suitable for different dietary preferences.
  • Make sure the skillet is hot enough before adding the quesadilla to ensure the tortilla crisps nicely rather than becoming soggy.
