  • ¼ teaspoon salt
  • 2 tablespoons lemon juice
  • 1 cup apple cider or apple juice

Instructions

  1. Sterilize jars: Boil jars and lids in water to sterilize them completely. Keep the jars warm until you are ready to fill them to prevent cracking and ensure food safety.
  2. Cook the jam: In a large pot, combine the apples, granulated sugar, brown sugar, cinnamon, nutmeg, allspice, salt, lemon juice, and apple cider or juice. Stir well to combine, then bring the mixture to a boil over medium-high heat.
  3. Simmer and thicken: Reduce the heat to a simmer and cook the mixture for 30 to 40 minutes, stirring often to prevent sticking. The jam will thicken as the apples break down and the sugars dissolve.
  4. Test for doneness: Place a small spoonful of jam onto a chilled plate. Allow it to sit for about a minute, then gently push it with your finger. If it gels and wrinkles slightly, the jam is ready. If not, continue simmering and test again after a few minutes.
  5. Jar and process: Ladle the hot jam into the sterilized jars, leaving ¼-inch headspace at the top. Wipe the rims clean, apply the lids securely, and process the jars in a boiling water bath for 10 minutes to seal and preserve the jam safely.
  6. Cool and store: Remove the jars from the water bath and let them cool completely on a towel or rack. After cooling, check that each jar is properly sealed. Store sealed jars in a cool, dark place for up to one year.
