Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) to get ready for baking the dish.
  2. Cook Chicken: Heat olive oil in a large oven-safe skillet or baking dish over medium heat. Add the diced chicken, season with salt and pepper, and cook until browned on all sides. Once cooked, remove the chicken from the pan and set aside.
  3. Sauté Garlic and Toast Orzo: In the same skillet, add the minced garlic and toast it for about 30 seconds until fragrant. Then stir in the uncooked orzo and toast it for an additional minute to bring out its nutty flavor.
  4. Add Broth and Veggies: Pour in the chicken broth and bring it to a simmer. Stir in the diced zucchini and halved cherry tomatoes to combine everything evenly.
  5. Add Boursin Cheese and Return Chicken: Nestle the Boursin garlic & herb cheese package in the center of the skillet. Return the browned chicken pieces to the dish and gently mix slightly to incorporate, then cover the skillet with foil.
  6. Bake Covered: Place the covered skillet in the preheated oven and bake for 20 minutes. This allows the orzo to cook through and the flavors to meld.
  7. Add Spinach and Parmesan: Remove the foil, stir in the baby spinach and optional grated Parmesan cheese. Return the skillet to the oven uncovered and bake for another 5 to 10 minutes until the dish is creamy and the orzo is tender.
