Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the dish.
  2. Cook Chicken: Heat olive oil in a large oven-safe skillet or baking dish over medium heat. Add diced chicken, season with salt and pepper, and cook until browned on all sides. Once done, remove chicken from the pan and set aside.
  3. Sauté Garlic and Toast Orzo: In the same pan, add minced garlic and toast for about 30 seconds until fragrant. Add uncooked orzo and toast for 1 minute, stirring frequently to coat with oil and garlic flavor.
  4. Add Broth and Vegetables: Pour in the chicken broth and bring the mixture to a simmer. Stir in diced zucchini and halved cherry tomatoes to distribute evenly.
  5. Add Boursin Cheese and Return Chicken: Place the package of Boursin garlic & herb cheese in the center of the skillet, then nestle the browned chicken pieces back into the dish. Mix slightly to combine.
  6. Bake Covered: Cover the skillet with foil and bake in the preheated oven for 20 minutes. This allows the orzo to absorb the broth and cook through.
  7. Add Spinach and Parmesan: Remove the foil, stir in the baby spinach and grated Parmesan cheese if using. Bake uncovered for another 5–10 minutes, until the orzo is tender and the dish becomes creamy.
