Filling
- 1 cup Medjool dates (about 13 dates), pitted and soaked
- ⅓ cup sunflower seed butter
- 1 tsp vanilla extract
- ⅓ cup protein powder (hemp, pumpkin seed, pea, or watermelon seed protein suggested)
- ¼ cup cocoa powder
- Pinch of salt
Coating (Optional)
- ½ cup dark chocolate
- ½ tsp coconut oil
- Soften the Dates: Remove pits from Medjool dates and soak them in hot water for 5 minutes to soften and enhance their chewiness.
- Blend Initial Ingredients: Drain the soaked dates and place them in a food processor with sunflower seed butter and vanilla extract. Blend until the mixture resembles thick, sticky caramel.
- Add Remaining Filling Ingredients: Add protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, scraping down the sides as needed to form a uniform dough.
- Form Balls: Scoop the dough and roll into approximately one tablespoon-sized balls by hand.
- Chill the Bites (Optional): Place the balls on a lined baking sheet and freeze for at least 30 minutes to firm up before coating.
- Melt Chocolate Coating: In a microwave-safe dish, melt the dark chocolate with coconut oil in 20-30 second intervals, stirring between each until smooth.
- Coat and Set: Dip each chilled ball into the melted chocolate to coat thoroughly, then return them to the lined baking sheet to set.
- Enjoy: Eat the protein bites immediately or store them refrigerated for a firmer texture and longer freshness.
