Dry Ingredients
- 7 cups Rice Chex Cereal (or store brand version)
- 1 ¼ cup powdered sugar, sifted
- 18 fun size Butterfinger candy bars (15 crushed and 3 roughly chopped for garnish)
Wet Ingredients
- 1 cup semi-sweet chocolate chips
- ½ cup creamy peanut butter
- ¼ cup salted butter
- 1 teaspoon pure vanilla extract
- Prepare the Cereal: Add the Rice Chex cereal to an extra large bowl and set aside. This will be the base for your coating process.
- Melt Chocolate Mixture: In a microwave-safe bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and salted butter. Microwave on high for 1 minute. Stir thoroughly until the mixture is completely melted and smooth.
- Add Vanilla: Stir in the pure vanilla extract until fully incorporated into the chocolate-peanut butter mixture, enhancing the flavor depth.
- Coat the Cereal: Drizzle the chocolate-peanut butter mixture over the Rice Chex cereal. Gently stir the mixture to evenly coat all the cereal pieces without breaking them.
- Add Crushed Butterfinger Candy: Mix in the 15 crushed Butterfinger candy bars with the coated cereal, distributing the candy pieces throughout the mix.
- Coat with Powdered Sugar: To coat with powdered sugar, either sprinkle it over the coated cereal and stir carefully, or place the coated cereal mixture into an extra-large (2-gallon) ziplock bag, add the powdered sugar, and shake well. The bag method helps contain the sugar and makes for easy cleanup.
- Dry and Garnish: Spread the powdered sugar-coated cereal out on a baking sheet to dry. Just before serving, sprinkle the remaining 3 chopped fun size Butterfinger candy bars on top for garnish and extra crunch.
Notes
- Milk chocolate chips, dark chocolate chips, or candy melts can be substituted for semi-sweet chocolate chips to adjust flavor.
- Use a mix of rice, corn, and wheat Chex cereals for a more varied texture.
- Add fun extras like mini peanut butter cups, Reese’s Pieces, or Butterfinger balls for extra indulgence.
