Ingredients

Scale

Dough Ingredients

  • 1 cup cottage cheese (full-fat works best)
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced

For Cooking and Garnish

  • 1 tablespoon butter for brushing
  • Chopped parsley or cilantro for garnish

Instructions

  1. Blend Cottage Cheese and Eggs: In a blender or food processor, blend the cottage cheese and eggs until the mixture is completely smooth and silky, ensuring a uniform texture for the dough.
  2. Combine Dry Ingredients: In a large bowl, stir together the all-purpose flour, almond flour, baking powder, and salt until evenly mixed.
  3. Form the Dough: Pour the blended cottage cheese and egg mixture into the dry ingredients and gently stir until a sticky dough forms, which is desired for the right consistency.
  4. Add Garlic: Incorporate the minced garlic evenly into the dough to infuse the naan with its signature flavor.
  5. Shape the Naan: Lightly flour your hands, shape the dough into small balls roughly the size of a golf ball, then flatten each ball into an oval about 1/4 inch thick.
  6. Heat the Pan: Preheat a non-stick or cast iron pan over medium heat and brush it lightly with butter to prevent sticking and add richness.
  7. Cook Naan: Place each flattened dough piece onto the heated pan and cook for 2–3 minutes per side until golden brown and puffed up, indicating it’s cooked through.
  8. Finish and Serve: Brush the cooked naan with melted butter while warm and sprinkle with chopped parsley or cilantro for a fresh aromatic garnish.

Notes

  • Using full-fat cottage cheese results in a richer, softer naan.
  • Almond flour adds a subtle nuttiness and makes the naan gluten reduced but not fully gluten-free due to all-purpose flour.
  • Adjust cooking heat if naan browns too quickly; medium heat ensures even cooking.
  • These naans are best eaten fresh but can be reheated in a skillet or oven.
  • To make it vegan, substitute eggs with a flax egg and use vegan butter for brushing.
