Ingredients

Scale

Main Ingredients

  • 1 pound Pulled Rotisserie Chicken
  • 14 oz (3 cups) Frozen Onions and Peppers (or 3 cups fresh diced onions and peppers)
  • 15 oz can Black Beans, drained and rinsed
  • 1 cup (140g) Frozen Fire Roasted Corn
  • 8 Flour Protein Tortillas (such as Counter protein tortillas)

For the Cheese Sauce

  • 2 cups Low Fat Cottage Cheese
  • 4 oz Diced Green Chiles
  • 1 packet Taco Seasoning
  • 2 oz Colby Jack Cheese
  • 12 Tablespoons Water (as needed for blending)

Instructions

  1. Prepare the Cheese Sauce: Add the cottage cheese, diced green chiles, taco seasoning, and Colby Jack cheese into a food processor or blender. Blend until smooth, adding 1 to 2 tablespoons of water as needed to achieve a creamy, pourable consistency. Set aside.
  2. Cook Vegetables: Heat a large pan over medium heat. Add frozen onions and peppers and cook 4-5 minutes until thawed and slightly softened.
  3. Add Chicken and Beans: Add the pulled rotisserie chicken, drained black beans, and fire-roasted corn to the pan with vegetables. Stir and cook for an additional 2-3 minutes until heated through.
  4. Combine with Cheese Sauce: Remove the pan from heat. Stir in the prepared cheese sauce until all ingredients are well coated and combined.
  5. Assemble Burritos: Spoon about 8 ounces of the cheesy chicken mixture evenly onto each protein tortilla. Roll each tightly into a burrito shape.
  6. Grill Burritos: Heat a griddle or nonstick skillet over medium heat. Place burritos seam-side down and grill for 30 to 60 seconds per side or until all sides are golden brown and crispy.

Notes

  • Frozen fire roasted onions and peppers can be substituted with about 3 cups of fresh diced onions and peppers if unavailable.
  • Protein tortillas like Counter brand provide additional calories and protein; adjust nutritional info accordingly if using other tortillas.
  • The cheese sauce is versatile and can be adjusted for thickness with water as needed.
  • For a spicier kick, add more diced green chiles or a pinch of cayenne pepper to the cheese sauce.
  • These burritos can be made ahead and reheated on the skillet or in the oven for convenience.
