Ingredients

Scale

Chicken

  • 2 small chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon poultry seasoning (or salt, pepper, garlic powder mix)

Bread and Garlic Butter

  • 1 Italian style loaf
  • 1 stick unsalted butter (melted)
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped parsley
  • 1 teaspoon crushed red pepper flakes

Alfredo Sauce

  • 1/2 stick unsalted butter
  • 1 tablespoon minced garlic
  • 1/2 cup heavy cream
  • 1/4 cup shredded parmesan cheese
  • 1 tablespoon chopped parsley

Toppings

  • 1/2 cup shredded mozzarella cheese
  • Remaining cooked chicken pieces

Instructions

  1. Prepare Chicken: Cut chicken breasts into ½ inch pieces and transfer to a bowl. Drizzle with 1 tablespoon olive oil and season with 1 tablespoon poultry seasoning or the salt, pepper, and garlic powder mix. Heat a pan over medium heat and cook chicken pieces until golden and cooked through, about 5-7 minutes. Set aside.
  2. Slice Bread and Make Garlic Butter: Slice the Italian loaf lengthwise in half. In a small bowl, combine 1 stick melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon crushed red pepper flakes. Mix well.
  3. Toast Bread: Spread the prepared garlic butter evenly on both bread halves. Place the bread on a baking sheet and toast in a preheated 350°F oven for 5-10 minutes. Check after 5 minutes and monitor until it reaches your desired crispness.
  4. Make Alfredo Sauce: Use the same pan. Heat over medium-low heat and add 1/2 stick unsalted butter. Once melted, stir in 1 tablespoon minced garlic and cook for 2-3 minutes until fragrant.
  5. Simmer Sauce: Reduce heat to low and pour in 1/2 cup heavy cream. Stir in 1/4 cup shredded parmesan cheese and 1 tablespoon chopped parsley. Simmer gently while stirring continuously until sauce thickens slightly, around 3-5 minutes. Remove from heat.
  6. Assemble Garlic Bread: Spread half of the Alfredo sauce on the toasted bread halves. Evenly distribute the cooked chicken over the sauce, then sprinkle 1/2 cup shredded mozzarella cheese on top. Pour the remaining Alfredo sauce over the cheese and chicken.
  7. Bake and Serve: Return the assembled bread to the 350°F oven and bake for another 5 minutes, or until the cheese is melted and bubbly. Remove from oven, slice into 2-3 inch pieces, and serve warm. Enjoy!

Notes

  • You can substitute poultry seasoning with a simple mix of salt, black pepper, and garlic powder.
  • Use fresh garlic for best flavor, but garlic paste works well too.
  • To make this dish spicier, increase the crushed red pepper flakes amount.
  • Leftover Alfredo sauce can be refrigerated and used within 2 days.
  • For a lower fat option, substitute heavy cream with half-and-half or a cream alternative.
