A delicious and hearty Chicken Avocado Sandwich featuring tender pan-cooked chicken breasts layered with creamy avocado, fresh tomato, red onion, and melted cheese, all grilled to golden perfection between mustard and mayo-spread bread slices.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • 4 slices of cheese (Swiss, cheddar, or provolone)

Bread and Condiments

  • 4 slices of bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Season the Chicken: Season the chicken breasts evenly with salt and pepper on both sides to enhance the flavor.
  2. Cook the Chicken: Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink inside. Remove from the skillet and allow to rest for a few minutes before slicing thinly to preserve juiciness.
  3. Prepare Avocado and Cheese: While the chicken rests, slice the avocado and prepare the cheese slices, setting them aside for assembly.
  4. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread to add moisture and flavor to the sandwich.
  5. Assemble the Sandwiches: On two slices of the prepared bread, layer the sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato on top for freshness and crunch.
  6. Top and Close: Place the remaining bread slices on top, mayo side down, to complete the sandwiches.
  7. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add a bit of butter or olive oil. Place the sandwiches in the pan and cook until the bread is golden brown and the cheese has melted, about 3-4 minutes per side. Use a spatula to press down gently, helping the cheese melt evenly.
  8. Serve: Remove the sandwiches from the skillet and let them cool for a minute. Slice them in half and serve warm for the best taste experience.

Notes

  • Allow the chicken to rest after cooking to keep it juicy when sliced.
  • Use ripe but firm avocado to avoid mushy sandwich texture.
  • You can substitute bread types to suit your preference or dietary needs.
  • For extra flavor, add fresh herbs like basil or cilantro.
  • Butter will give a richer flavor when grilling the sandwich compared to olive oil.
