Ingredients

Scale

Sandwich Ingredients

  • 4 slices of bread (sourdough or your preferred type)
  • 1 cup cooked chicken (shredded or sliced)
  • 4 slices mozzarella cheese (or 1 cup shredded mozzarella)
  • 1/4 cup marinara sauce
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons unsalted butter (softened)
  • 1 teaspoon Italian seasoning

Instructions

  1. Butter the Bread: Spread softened butter evenly on one side of each bread slice. Sprinkle grated parmesan cheese over the buttered sides and press gently so the cheese adheres well.
  2. Preheat the Pan: Heat a non-stick skillet or griddle over medium heat until hot but not smoking.
  3. Assemble the Sandwich: Place one bread slice buttered side down on the skillet. Layer with one slice of mozzarella cheese, followed by shredded chicken, a spoonful of marinara sauce, and another slice of mozzarella cheese.
  4. Top with Second Bread Slice: Cover the layered filling with the second bread slice, buttered side facing up.
  5. Cook the Sandwich: Toast the sandwich for 3 to 4 minutes on one side until golden brown and crispy. Carefully flip the sandwich and toast the other side for an additional 3 to 4 minutes. If the bread begins to brown too fast, reduce the heat to medium-low.
  6. Melt the Cheese: Press down gently with a spatula to help the cheese melt evenly and ensure the sandwich holds together well.
  7. Serve: Remove the sandwich from the skillet and let it cool slightly. Slice in half and serve warm for best enjoyment.

Notes

  • Use sourdough or any sturdy bread to hold the fillings well without getting soggy.
  • Shredded cooked chicken can be substituted with leftover rotisserie chicken or grilled chicken breast.
  • Use freshly grated parmesan cheese for better flavor and melting quality.
  • Adjust marinara amount to your taste but avoid overfilling to prevent soggy bread.
  • For extra flavor, sprinkle Italian seasoning over the fillings before closing the sandwich.
  • If desired, cover the skillet while cooking to help melt the cheese faster.
