  • 1/2 cup Granulated Sugar (100g)
  • 1/2 cup Light Brown Sugar (110g)
  • 1 1/2 cups All-purpose Flour (187g)
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt

Instructions

  1. Prepare the butter and sugars: Melt the butter in the microwave and pour it into a mixing bowl. Add the granulated sugar and light brown sugar, then mix thoroughly until combined and smooth.
  2. Mix espresso paste: Dissolve the espresso powder in a small splash of hot water to form a smooth paste. Add this paste to the butter and sugar mixture, stirring until evenly distributed.
  3. Add egg and vanilla: Crack the egg into the bowl along with the vanilla extract. Stir the mixture until fully incorporated and smooth.
  4. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, stirring gently until a soft dough forms.
  5. Chill the dough: Cover the dough and place it in the refrigerator to chill for 30 minutes. This makes the dough easier to handle and helps cookies maintain their shape during baking.
  6. Prepare baking sheet and oven: Preheat your oven to 350°F (180°C). Line a cookie sheet with parchment paper to prevent sticking and allow for easy cleanup.
