Ingredients

Scale

Meat Filling

  • 1 pound (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 small carrot, diced
  • 2 tablespoons all-purpose flour
  • ½ cup (120ml) beef broth
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon dried thyme

Pie Crust and Finish

  • 2 (9-inch) unbaked pie crusts (homemade or store-bought)
  • 1 egg (for egg wash)

Instructions

  1. Preheat and Prep: Preheat your oven to 425°F (220°C). Place one of the pie crusts into a 9-inch pie plate, allowing it to slightly overhang the edges for sealing later.
  2. Make the Filling: In a skillet over medium heat, brown the ground beef until fully cooked. Add the finely chopped onion, minced garlic, and diced carrot. Cook, stirring occasionally, until the vegetables soften and become translucent. Sprinkle the flour over the mixture and stir well to incorporate. Slowly add the beef broth along with Worcestershire sauce, salt, black pepper, and dried thyme. Let this mixture simmer gently for about 5 minutes to thicken, then remove from heat and allow it to cool slightly.
  3. Fill and Cover: Pour the cooled beef mixture evenly into the prepared pie crust. Cover with the second pie crust, then crimp the edges to seal the pie securely. Using a sharp knife, cut a few slits in the top crust to allow steam to escape during baking. Brush the entire top crust with a beaten egg to achieve a shiny, golden finish once baked.
  4. Bake the Pie: Place the assembled pie onto the oven rack and bake at 425°F (220°C) for approximately 30-35 minutes, or until the crust is golden brown and cooked through. Remove from oven and let it rest for 10 minutes before slicing and serving to allow the filling to set.

Notes

  • You can substitute ground beef with ground lamb for a different flavor profile.
  • If you prefer, add frozen peas or corn to the filling during the last few minutes of cooking for extra vegetables.
  • Ensure the filling has cooled slightly before assembling the pie to prevent the crust from becoming soggy.
  • Use a sharp knife to create steam vents in the crust to avoid bubbling and ensure even cooking.
  • Egg wash can be made with just egg yolk or whole egg beaten with a tablespoon of water or milk for glossiness.
