Ingredients

Scale

Ingredients

  • 9 squishy Medjool dates
  • 3 tablespoons peanut butter (or other nut butter)
  • 2 tablespoons chopped peanuts
  • ¼ cup dark chocolate chips
  • Flaky sea salt (optional topping)

Instructions

  1. Prepare the Dates: Use your fingers or a knife to split each Medjool date in half lengthwise and carefully remove the pit in the center. Arrange the halved dates cut-side up on a plate or baking sheet lined with parchment paper.
  2. Add Nut Butter and Peanuts: Spread about ½ teaspoon of peanut butter evenly on the inside of each date half. Then sprinkle chopped peanuts on top of the nut butter to add a satisfying crunch.
  3. Melt the Chocolate: Place ¼ cup of dark chocolate chips in a heat-safe bowl. Melt them using a double boiler method: fill a small saucepan with an inch of water, bring to a boil on the stovetop, then cover the saucepan with the bowl containing chocolate chips. Stir often until smooth. Alternatively, melt in the microwave using 30-second intervals, stirring between each.
  4. Top with Chocolate and Salt: Spoon the melted chocolate over the nut butter and peanuts on each date half, drizzling it on top without fully covering the whole date, allowing the natural sweetness to shine. While chocolate is still warm, sprinkle flaky sea salt over each piece for a delightful sweet and salty contrast.
  5. Set Chocolate: Place the tray or plate in the refrigerator for about 10 minutes to let the chocolate harden. Once the chocolate is firm, the Date Snickers are ready to enjoy.

Notes

  • Nutrition information is based on two stuffed date halves (one serving), assuming 18 halves from 9 dates. Values are estimates using generic ingredients.
  • If you prefer nut-free or different nuts, substitute peanuts and peanut butter with alternatives like almonds, cashews, pistachios, sunflower seeds, or sunflower seed butter.
  • If melted chocolate is too thick to drizzle, add a small amount of coconut oil to thin it out but keep these refrigerated to maintain firmness.
  • Store Date Snickers in an airtight container at room temperature for up to a week or refrigerated for up to a month.
