Ingredients

Scale

Roll Ups

  • 4 large flour tortillas (about 12 inches in diameter)
  • 8 slices provolone cheese, thinly sliced
  • 12 ounces deli roast beef, freshly sliced
  • 1 cup French fried onions (store-bought or homemade)
  • 2 tablespoons extra virgin olive oil

Au Jus Dip

  • 1 can (10.5 ounces) beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Assemble Roll Ups: Lay one tortilla flat and place 2 slices of provolone cheese on half of it. Add about 3 ounces of roast beef on top, followed by a generous handful of French fried onions. Lightly brush the inside edge of the tortilla with olive oil.
  3. Roll and Seal: Starting from the filled end, roll the tortilla tightly to enclose all fillings. Press the oiled edge firmly to seal the roll. Place it seam-side down on the prepared baking sheet. Repeat with remaining tortillas.
  4. Oil the Tops: Lightly brush the tops and sides of each roll up with the remaining olive oil to help achieve a crisp, golden finish when baked.
  5. Bake Roll Ups: Bake in the preheated oven for 8–10 minutes. Rotate the baking sheet halfway through baking if needed. Look for golden brown tortillas and cheese starting to bubble at the edges.
  6. Prepare Au Jus: While the roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Heat over medium heat, whisking to blend. Bring to a gentle simmer and cook for 3–4 minutes until hot and fragrant.
  7. Rest and Slice: Once baked, let the roll ups rest on a wire rack for 2 minutes to allow the cheese to set. Then slice each roll into halves or thirds for easy serving.
  8. Serve: Arrange roll up slices on a platter and serve immediately with warm au jus dip for dipping.

Notes

  • For easier rolling without cracking, warm the tortillas briefly before assembling.
  • Allow the roll ups to rest before slicing to keep the fillings intact.
  • Store leftovers in an airtight container and reheat in the oven to maintain crispness.
  • Provolone cheese can be substituted with mozzarella or Swiss cheese according to preference.
  • Check all ingredient labels carefully if you have allergy concerns.
