Brownie Base
- 18.3 oz box family size brownie mix (for a 13×9″ pan)
- 2 large eggs (or as listed on box)
- 3 Tbsp water (or as listed on box)
- ⅔ cup vegetable oil (or as listed on box)
Coconut Pecan Topping
- 14 oz can sweetened condensed milk
- 1 tsp vanilla extract
- 1 large egg
- 1 ½ cups sweetened coconut flakes
- 1 cup chopped pecans (toasted, optional)
- ¾ cup semi-sweet chocolate chips
- Toast Pecans (Optional): Place pecans in a dry skillet over medium heat, stirring frequently until golden brown and fragrant, about 2-5 minutes. Remove immediately from heat and transfer to a plate to cool completely. Chop if needed.
- Preheat Oven: Heat oven to 350°F (175°C). Lightly grease a 13×9-inch baking pan or line it with parchment paper with an overhang for easy removal.
- Prepare Brownie Base: In a large bowl, combine the brownie mix with eggs, water, and vegetable oil as instructed on the box. Whisk until mostly smooth with few lumps. Pour into prepared pan and spread evenly. Bake for 10 minutes; the edges should just begin to set.
- Make Coconut Pecan Topping: In a separate bowl, mix sweetened condensed milk, vanilla extract, and egg. Stir in coconut flakes and chopped pecans until well combined.
- Assemble: Remove partially baked brownie base from oven. Drop spoonfuls of the coconut-pecan mixture evenly across the surface, do not pour. Sprinkle semi-sweet chocolate chips over the topping.
- Bake Final: Return pan to oven and bake an additional 25-30 minutes until edges are brown and a toothpick inserted near the center comes out with only a few moist crumbs. Cool completely before lifting out and cutting into bars.
