Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the head of garlic to expose the cloves, drizzle with 1 tablespoon of olive oil, then wrap it tightly in aluminum foil. Roast the garlic in the oven for 30-35 minutes until soft and caramelized. Allow it to cool slightly, then squeeze the roasted cloves out of their skins into a bowl.
  2. Sauté the Spinach: Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste. Remove from heat and set aside.
  3. Prepare the Garlic Ricotta Mixture: Mash the roasted garlic in the bowl with a fork until smooth. Add ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix everything well to create a creamy spread.
  4. Assemble the Pizza: Spread the garlic-ricotta mixture evenly over the pre-made pizza crust. Distribute the sautéed spinach on top, then sprinkle with the remaining mozzarella cheese and crumbled feta cheese. If desired, sprinkle crushed red pepper flakes evenly across the pizza for some heat.
  5. Bake: Place the assembled pizza on a baking sheet or pizza stone and bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheeses are melted, bubbly, and slightly browned.
