Instructions

  1. Grill the Chicken: Season the chicken breasts with 2 tablespoons olive oil, salt, pepper, and any optional spices you prefer. Preheat your grill or grill pan to medium-high heat. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the outside is nicely charred. Remove from heat and let rest before slicing.
  2. Roast the Broccoli: Preheat your oven to 400°F (200°C). Toss the broccoli florets with about 1 tablespoon olive oil, lemon juice, and a pinch of salt. Spread the broccoli evenly on a baking sheet and roast for 15-20 minutes, turning once halfway through, until the broccoli is crisp-tender and slightly browned.
  3. Cook the Grains: Prepare your choice of grains according to the package instructions. Once cooked, fluff the grains with a fork and keep them warm until ready to assemble the bowls.
  4. Make the Creamy Garlic Sauce: In a small saucepan over medium heat, melt 2 tablespoons butter. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Stir in the 1/2 cup heavy cream and season with salt and pepper. Let the sauce simmer gently for 3-5 minutes until it thickens slightly, stirring frequently. Remove from heat.
  5. Assemble the Bowls: Divide the cooked grains evenly among serving bowls. Slice the grilled chicken breasts and arrange them over the grains. Add the roasted broccoli on the side, then drizzle the creamy garlic sauce generously over the top. Garnish with freshly chopped parsley or chives if desired. Serve immediately and enjoy!
