Instructions

  1. Prep and Roast Sweet Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, cinnamon, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet. Roast in the oven for 40 to 45 minutes, stirring halfway through to ensure even cooking and a tender, caramelized finish.
  2. Cook Ground Beef: While the sweet potatoes roast, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat.
