  • 1 cup natural peanut butter
  • 1/4 tsp salt (only if peanut butter isn’t salted)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Mix Ingredients: In a bowl, thoroughly combine the almond flour, natural peanut butter, salt (if needed), maple syrup, and vanilla extract until a smooth dough forms.
  2. Form Balls: Roll the mixture into small balls, about one inch in diameter, ensuring they hold together well. Place them on a tray and refrigerate for 30 minutes to firm up.
  3. Melt Chocolate: In a small bowl, melt the chocolate chips with the coconut oil in 30-second increments in the microwave, stirring between each until smooth and fully melted.
  4. Dip Buckeyes: Using a fork, dip each chilled ball into the melted chocolate, covering about two-thirds of each ball. Lift them out, allowing excess chocolate to drip off, then place them back on the tray.
  5. Set the Chocolate: Place the dipped buckeyes in the refrigerator for at least 15 minutes to allow the chocolate coating to fully set.
  6. Store and Serve: Keep the buckeyes stored in the refrigerator until ready to eat to maintain their shape and freshness.

Notes

  • You can substitute oat flour for almond flour; however, start with 3/4 cup and gradually add more until the dough is firm enough to roll into balls.
  • If peanut butter is already salted, omit the additional salt.
  • Store buckeyes refrigerated and consume within one week for best freshness.
