  • 4 cups marshmallows (divided)

Instructions

  1. Prepare the Pan: Line an 8×8 inch pan with foil or parchment paper and coat it lightly with cooking spray to prevent sticking.
  2. Melt Chocolate Mixture: In a double boiler, combine 1 1/2 cups semi-sweet chocolate chips, 1 1/2 cups milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir continuously over medium heat until everything is melted and the mixture is smooth, ensuring not to let it boil to avoid graininess.
  3. Add Marshmallows: Stir in 2 cups of marshmallows and continue stirring for about 1 minute until they begin to melt and incorporate smoothly.
  4. Flavor and Transfer: Remove the mixture from heat and mix in 2 teaspoons of vanilla extract thoroughly. Pour the fudge mixture into the prepared pan, spreading evenly.
  5. Top with Marshmallows: Press the remaining 2 cups of marshmallows gently onto the surface of the fudge to create a soft, chewy topping.
  6. Refrigerate: Place the pan in the refrigerator and chill for at least 4 hours or until the fudge is firm.
  7. Cut the Fudge: Once set, cut the fudge into squares as desired.
  8. Prepare Chocolate Drizzle: Microwave the remaining 1/2 cup of semi-sweet chocolate chips in 30-second increments, stirring between each, until melted and smooth.
