Ingredients

Scale

Chocolate Mixture

  • 2 cups semi-sweet chocolate chips (divided)
  • 1 1/2 cups milk chocolate chips
  • 3 tablespoons butter
  • 14 ounces sweetened condensed milk
  • 4 packages hot chocolate mix (about 1/2 cup)
  • 2 teaspoons vanilla extract

Marshmallows and Garnish

  • 4 cups marshmallows (divided)
  • Peppermint candy canes or crushed peppermints for garnish (about 1/2 cup)

Instructions

  1. Prepare Pan: Line an 8×8-inch pan with foil or parchment paper and spray lightly with cooking spray to prevent sticking.
  2. Melt Chocolate Mixture: Using a double boiler, combine 1 1/2 cups semi-sweet chocolate chips, 1 1/2 cups milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix. Stir continuously over medium heat until everything is melted and smooth, making sure not to boil.
  3. Add Marshmallows: Stir in 2 cups of marshmallows for one minute, ensuring they begin to soften and incorporate into the chocolate mixture.
  4. Remove from Heat and Flavor: Take the mixture off the heat and stir in the vanilla extract thoroughly for enhanced flavor.
  5. Transfer to Pan and Top: Pour the fudge mixture into the prepared pan and evenly press the remaining 2 cups of marshmallows onto the top surface.
  6. Chill: Refrigerate the fudge for at least 4 hours until firmly set.
  7. Cut and Drizzle: Cut the set fudge into squares. Melt the remaining 1/2 cup semi-sweet chocolate chips in the microwave in 30-second increments, stirring until smooth. Drizzle this melted chocolate over the fudge squares and let it cool completely before serving.

Notes

  • For a stronger peppermint flavor, replace 1 tablespoon of vanilla extract with 1 tablespoon peppermint extract.
  • For easier drizzling, put the melted chocolate drizzle into a zippered plastic bag and cut off a small corner tip before drizzling over the fudge.
  • Be cautious not to let the mixture boil when melting chocolate to maintain smooth texture.
