Ingredients

Scale

Chicken Salad

  • 1 large Chicken Breast
  • 3/4 cup Cottage Cheese
  • 2 Celery Stalks, diced
  • 2 Green Onions, sliced
  • 1/2 cup Shredded Cheddar Cheese
  • 3 tbsp Chopped Fresh Jalapeno
  • 5 slices Bacon, cooked and crumbled

Jalapeno Dressing

  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Fresh Jalapeno
  • 1/4 cup Fresh Cilantro
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Salt
  • Juice of 2 Limes

Instructions

  1. Cook the Chicken: Cook the chicken breast using your preferred method such as baking, boiling, or grilling until fully cooked. Once done, shred and chop into small pieces, then set aside to cool.
  2. Prepare Vegetables: Dice the celery stalks, slice the green onions, and chop the fresh jalapenos. Set aside.
  3. Combine Salad Ingredients: In a large bowl, mix together the shredded chicken, diced celery, sliced green onions, chopped jalapenos, crumbled bacon, cottage cheese, and shredded cheddar cheese. Stir well to evenly distribute all ingredients.
  4. Make the Jalapeno Dressing: In a food processor or blender, add the sour cream, chopped jalapenos, fresh cilantro, onion powder, garlic salt, and lime juice. Blend until the mixture is smooth and creamy.
  5. Toss the Salad with Dressing: Pour the prepared jalapeno dressing over the chicken salad mixture. Toss thoroughly to coat every ingredient with the flavorful dressing.
  6. Serve: Serve the salad chilled or at room temperature over salad greens, on keto-friendly bread, or enjoy it as is for a satisfying low-carb meal.

Notes

  • For extra heat, leave some jalapeno seeds in the dressing and salad.
  • Use smoked bacon for a richer smoky flavor.
  • Substitute sour cream with Greek yogurt for a tangier dressing and higher protein.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • This salad is excellent for meal prep and easy grab-and-go lunches.
