Peanut Butter Layer

Instructions

  1. Prepare Pan: Grease an 8-inch square pan thoroughly and set aside to prevent sticking.
  2. Cook Peanut Butter Mixture: In a medium to large saucepan, combine 1 cup creamy peanut butter, ½ cup light corn syrup, and ½ cup granulated sugar. Cook over medium-low heat, stirring constantly until the mixture is warm, gooey, and the sugar dissolves completely without any graininess.
  3. Add Cornflakes: Remove the saucepan from heat and immediately stir in 4 cups of cornflakes. Stir well to coat the cornflakes evenly with the peanut butter mixture; it’s fine if some cornflakes break.
  4. Press into Pan: Transfer the peanut butter cornflake mixture into the prepared pan. Use the bottom of a measuring cup to press and compact the mixture firmly to ensure it sticks together well.
  5. Make Chocolate Icing: In a small bowl, combine ¾ cup chocolate chips with 2 tablespoons creamy peanut butter. Microwave the mixture for 30 seconds, then stir. Continue microwaving in 15-second intervals, stirring each time, until the mixture is smooth and fully melted.
  6. Spread Icing: Spread the melted chocolate peanut butter icing evenly over the pressed cornflake layer in the pan.
  7. Set Bars: Allow the bars to set at room temperature or speed up the process by placing the pan in the refrigerator until firm.
