Ingredients

Scale

Base Layer

  • 1/2 cup butter, melted
  • 2 ⅓ cups graham cracker crumbs (about 18 long rectangular crackers)
  • 1 ½ cups peanut butter
  • 2 cups powdered sugar (confectioners’ sugar)

Topping

  • 1/2 cup peanut butter
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Prepare Pan and Melt Butter: Line an 8×8 inch square pan with parchment paper. In a microwave-safe bowl, melt 1/2 cup butter in the microwave for about 1 minute. Set aside.
  2. Crush Graham Crackers: Place the graham crackers into a large zip-top bag, and crush them finely using a rolling pin. Set the crumbs aside.
  3. Mix Base Ingredients: In a large mixing bowl, combine 1 1/2 cups peanut butter with the melted butter. Stir until fully blended with a silicone spatula.
  4. Add Powdered Sugar: Mix in 1 cup of powdered sugar until combined, then add the second cup and integrate thoroughly until you get a thick, moldable dough.
  5. Fold in Graham Cracker Crumbs: Gently fold the crushed graham cracker crumbs into the peanut butter mixture using the spatula, creating a dense dough.
  6. Form Base Layer: Press the peanut butter dough evenly into the bottom of the parchment-lined pan. Place a second piece of parchment paper on top of the dough, then use the bottom of a small flat measuring cup to press and smooth the layer evenly.
  7. Prepare Chocolate Topping: In a third bowl, combine 1 1/2 cups semi-sweet chocolate chips with 1/2 cup peanut butter. Microwave on half power, stirring every 30 seconds, until the mixture is smooth and well blended, about 3 minutes total.
  8. Assemble and Chill: Pour the chocolate mixture over the peanut butter base and spread evenly. Refrigerate the pan for 1 1/2 hours to allow the bars to firm up.
  9. Cut and Serve: Lift the chilled bars out of the pan using the parchment paper. Score the chocolate topping into small squares with a large knife by gently pressing to form lines. Then slice along these lines to cut bars evenly. Serve cold and enjoy!

Notes

  • Do not use natural peanut butter with oil separation as it may cause separation in the mixture.
  • You can use either crunchy or smooth peanut butter based on your preference.
  • Almond butter or other nut butters may be substituted if desired.
  • Ensure the bars are well chilled before cutting for clean slices.
