Ingredients

Scale

Cake

  • 1 box of red velvet cake mix
  • 1 cup of buttermilk
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1/2 teaspoon of vanilla extract

Filling

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

Coating

  • 2 cups white chocolate chips
  • Sprinkles or cocoa powder for coating (optional)

Instructions

  1. Prepare and bake the cake: Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch cake pan with parchment paper. In a large mixing bowl, combine the red velvet cake mix, buttermilk, vegetable oil, eggs, and vanilla extract, mixing until smooth. Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  2. Cool the cake: Remove the cake from the oven and allow it to cool completely in the pan on a wire rack to ensure it firms up and flavors develop fully.
  3. Crumble the cake: Once cooled, crumble the cake into a large bowl to form fine crumbs that will blend easily with the cream cheese mixture.
  4. Make the cream cheese filling: In a separate bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing thoroughly until fully incorporated and creamy.
  5. Combine cake and filling: Add the cream cheese mixture to the crumbled cake and blend until the mixture is uniform and rich, forming a cohesive dough.
  6. Form truffles and chill: Roll the mixture into bite-sized balls using your hands and place them on a parchment-lined baking sheet. Refrigerate for at least 30 minutes to help them set and firm up for dipping.
  7. Melt the white chocolate: While the truffles chill, gently melt the white chocolate chips in a microwave or double boiler, stirring frequently until smooth and glossy.
  8. Dip and decorate: Dip each chilled truffle into the melted white chocolate, letting excess drip off. Place back on the parchment paper and sprinkle with optional festive sprinkles or dust with cocoa powder before the chocolate sets.
  9. Set and serve: Allow the truffles to set completely at room temperature or in the refrigerator before enjoying your decadent bites.

Notes

  • Experiment with different coatings such as chopped nuts or crushed cookies for added texture and flavor.
  • Store the truffles in an airtight container in the refrigerator to keep fresh for up to one week.
  • Perfect to serve alongside a warm cup of coffee or a glass of milk.
  • For a dairy-free variation, substitute cream cheese with vegan cream cheese or softened coconut cream.
  • Dark chocolate can be used instead of white chocolate for a richer flavor profile.
