Ingredients

Scale

Chicken

  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat chicken)
  • 1 cup shredded mozzarella cheese

Potatoes

  • 5 medium-sized potatoes, chopped into bite-sized pieces
  • 2 tbsp olive oil
  • Salt (to season)
  • Pepper (to season)
  • Garlic powder (to season)
  • 1 tsp paprika (to season)

Instructions

  1. Prepare the Potatoes: Wash and chop the potatoes into bite-sized pieces. In a bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika to evenly coat.
  2. Layer Potatoes in Slow Cooker: Place the seasoned potatoes in the bottom of the slow cooker as the base layer.
  3. Season the Chicken: Season the chicken breasts with salt, black pepper, paprika, onion powder, and Italian seasoning on all sides for maximum flavor.
  4. Arrange Chicken on Potatoes: Lay the seasoned chicken breasts on top of the potatoes inside the slow cooker.
  5. Add Garlic and Sauce: Spread the minced garlic evenly over the chicken breasts, then pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat thoroughly.
  6. Slow Cook: Cover the slow cooker and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked through and the potatoes are tender.
  7. Add Cheese: In the last 30 minutes of cooking, sprinkle shredded mozzarella cheese over the dish, cover again, and let the cheese melt completely.
  8. Serve: Serve warm, optionally garnished with extra Parmesan cheese or fresh herbs for added flavor and presentation.

Notes

  • You can substitute chicken thighs for a juicier texture and richer flavor.
  • Add broccoli or green beans during the last hour of cooking to create a complete one-pot meal with vegetables.
  • Adjust the amount of Garlic Parmesan sauce according to your spicy preference as the sauce is flavorful but mild.
