Dry Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 2 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 5 Tablespoons vegetable oil (or canola oil)
- 1 teaspoon apple cider vinegar (or white vinegar)
- 1 cup water
Additional
- 2 Tablespoons rainbow sprinkles (Betty Crocker Sprinkles recommended)
- White or vanilla frosting or powdered sugar, for topping
- Extra rainbow sprinkles for decoration (optional)
- Preheat and prepare the pan: Preheat your oven to 350°F. Spray an 8″x 8″ baking dish with non-stick cooking spray to prevent sticking.
- Mix dry ingredients: In the prepared baking dish, combine the all-purpose flour, sugar, baking soda, and salt. Mix them well so the dry ingredients are fully blended.
- Create wells for wet ingredients: Make three depressions in the dry ingredients — two small and one larger. Add the vinegar in one small depression, vanilla and almond extracts in the other small depression, and vegetable oil in the larger depression.
- Add water and combine: Pour the entire cup of water evenly over the dry and wet ingredients in the dish. Using a fork, mix everything together thoroughly until smooth and well combined.
- Fold in sprinkles: Last, gently fold in 2 tablespoons of rainbow sprinkles into the batter for a fun, colorful surprise inside the cake.
- Bake the cake: Place the baking dish on the middle rack of the preheated oven and bake for approximately 35 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
- Cool and decorate: Allow the cake to cool completely in the dish before topping it with your favorite white or vanilla frosting, or simply dust with powdered sugar. Optionally, decorate the top with extra rainbow sprinkles for added color and fun.
- Serve and enjoy: Slice and serve this moist, festive cake as a delightful treat for any occasion.
Notes
- If you do not like sprinkles or don’t have any on hand, you can omit them for a simple vanilla cake.
- If almond extract is unavailable, it can be left out without impacting the cake’s success.
- Be sure to use fresh baking soda and vinegar as they are essential for the cake’s leavening and rise.
- You may top the cake with your favorite white or vanilla frosting, or simply powder with sugar for a lighter finish.
