Star Crunch Cookies are a delightful no-bake treat combining melted butter, caramel bits, chocolate chips, marshmallows, and crispy Rice Krispies cereal to create a chewy, sweet, and crunchy snack. These cookies are perfect for a quick dessert that requires no oven and can be set faster by refrigerating.

Ingredients

Scale

Wet and Melting Ingredients

  • ½ cup unsalted butter (1 stick)
  • 2 cups Kraft caramel bits
  • 2 cups milk chocolate chips
  • ⅓ cup whole milk
  • 11 ounces marshmallows

Dry Ingredients

  • 8 cups Rice Krispies cereal

Instructions

  1. Heat Ingredients: In a large stock pot on low heat, combine the butter, caramel bits, chocolate chips, and milk. Melt slowly over 10-15 minutes, pressing down on caramel bits occasionally to help them soften and melt evenly without burning.
  2. Melt Marshmallows: Add the marshmallows to the melted mixture and stir constantly until fully melted. Remove the pot from heat to prevent burning.
  3. Mix in Cereal: Quickly add the Rice Krispies cereal to the marshmallow mixture and stir thoroughly until the cereal is well coated before the mixture cools and hardens.
  4. Shape Cookies: Prepare a cookie sheet lined with parchment paper or foil and lightly grease it. Drop heaping 3-tablespoon scoops of the mixture onto the sheet and lightly flatten each scoop. To avoid sticking, use a small piece of parchment paper or a measuring cup to flatten after the cookies have cooled slightly.
  5. Cool and Set: Allow the cookies to cool and fully set for about an hour at room temperature. For faster setting, place the cookies in the refrigerator before serving.

Notes

  • To speed up the setting process, refrigerate the cookies once shaped.
  • Spray your cookie scoop or spoon lightly with non-stick spray to prevent sticking while scooping and shaping.
  • Heat the mixture slowly and carefully to avoid burning the marshmallows or chocolate.
