Ingredients

Scale

Chicken Marinade and Sauce

  • 1 lb chicken breast (boneless, skinless)
  • 1 tablespoon olive oil
  • 1/2 cup sweet chili sauce
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional for extra heat)
  • Salt and pepper to taste

Pizza Base and Toppings

  • 1 pizza dough (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped (optional, for garnish)
  • 1/2 tablespoon sesame seeds (optional, for garnish)

Instructions

  1. Preheat the oven: Set your oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating to ensure a hot surface for a crispy crust.
  2. Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Cook the chicken for 6-7 minutes on each side until fully cooked and reaches an internal temperature of 165°F (74°C). Remove from heat and let it rest for a few minutes, then dice into small bite-sized pieces.
  3. Prepare the chili garlic sauce: In a small bowl, combine the sweet chili sauce, minced garlic, soy sauce, rice vinegar, and red pepper flakes if using. Mix well and set aside to let the flavors meld.
  4. Assemble the pizza: Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer the dough to a greased baking sheet or onto the preheated pizza stone. Spread the sweet chili garlic sauce evenly over the dough, leaving a small border around the edges for the crust.
  5. Add the toppings: Sprinkle half of the shredded mozzarella cheese over the sauce. Distribute the diced chicken evenly across the pizza. Add thin slices of red onion, followed by the remaining mozzarella cheese. Top everything with shredded cheddar cheese for an extra cheesy and flavorful finish.
  6. Bake the pizza: Place the pizza in the preheated oven and bake for 10-12 minutes, or until the crust is golden brown and crispy and the cheese is melted and bubbly.
  7. Garnish and serve: Remove the pizza from the oven and allow it to cool for a couple of minutes. Garnish with chopped cilantro and sesame seeds if desired. Slice and serve immediately for best taste.

Notes

  • Storage: Store leftover pizza in an airtight container in the refrigerator for up to 3 days.
  • Freezing: Assemble the pizza with toppings, then wrap tightly in plastic wrap and aluminum foil. Freeze before baking. Bake from frozen at 475°F for 15-20 minutes until fully cooked.
  • Make-Ahead: Prepare the chicken, sauce, and toppings ahead of time. Assemble and bake the pizza within a day for best results.
  • To keep crust crispy, avoid overloading with sauce and use a preheated pizza stone if possible.
  • For spicier pizza, increase red pepper flakes or add sriracha sauce.
