Instructions

  1. Cook Pasta: Boil a large pot of salted water and cook the spaghetti until al dente according to package instructions. Drain well and set aside.
  2. Sauté Garlic: While the pasta cooks, heat olive oil and butter in a skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it.
  3. Cook Tomatoes: Stir in halved grape tomatoes, chicken broth, and Italian seasoning. Cook for approximately 5 minutes, stirring occasionally, until tomatoes are soft and have released their juices.
  4. Add Shrimp and Spinach: Add the shrimp to the skillet followed by the fresh baby spinach. Reduce heat to medium and cook for another 5 minutes, or until shrimp turn pink and are cooked through and spinach is wilted.
  5. Season and Combine: Season the mixture with salt and pepper to taste. Toss the shrimp and vegetable sauce with the cooked spaghetti until fully combined. Add reserved hot pasta water as needed to loosen the sauce.
