Instructions

  1. Prepare the Feta: Break the block of feta cheese into approximately 8 pieces and place them in a fine mesh strainer. Rinse briefly under cold water to reduce some saltiness, then drain well.
  2. Make the Hot Honey: In a small saucepan, combine the honey and red pepper flakes. Warm over medium heat just until the honey starts to simmer. Remove from heat and allow to cool.
  3. Whip the Feta Mixture: Transfer the drained feta to a food processor bowl. Add the lemon juice and milk or Greek yogurt. Process until the mixture resembles ricotta or cottage cheese in texture. While the processor is running, slowly drizzle in the olive oil. Scrape down the sides and process again until smooth and creamy, similar to Greek yogurt consistency.
  4. Serve the Dip: Transfer the whipped feta mixture to a serving bowl. Use a spoon to create a swirl pattern on the surface. Drizzle the cooled hot honey over the dip, then sprinkle with finely chopped pistachios. Serve immediately alongside toasted baguette slices.
