Instructions

  1. Prepare the Feta: Break the block of feta into about 8 pieces and place them in a fine mesh strainer. Rinse briefly under cold water to reduce some of the saltiness, then drain well to remove excess moisture.
  2. Make the Hot Honey: Combine the honey and red pepper flakes in a small saucepan. Warm over medium heat until the honey begins to simmer, then remove from the heat and allow it to cool while you prepare the whipped feta.
  3. Whip the Feta: Transfer the drained feta pieces to a food processor. Add lemon juice and whole milk (or Greek yogurt). Process until the mixture looks like ricotta or cottage cheese. With the processor running, slowly drizzle in the olive oil. Stop to scrape down the sides and continue processing until the dip is smooth and creamy, resembling the consistency of Greek yogurt.
  4. Assemble and Serve: Spoon the whipped feta into a serving bowl and create a swirl pattern with the back of a spoon. Drizzle the cooled hot honey evenly over the dip. Sprinkle the chopped pistachios on top as garnish. Serve immediately alongside toasted baguette slices.
